Beets Baked with Lemon and Garlic

I love beets. I love them raw, grated on salads or cooked and tossed with a little lemon juice, garlicand olive oil like this recipe. They're dense, colourful and rich with flavour. It's hard to prepare beets any other way once you try this recipe. These are great served warm as a side dish or as part of a salad. Or, you could try something a little different with this recipe for salade d'hiver with beets, feta cheese, grapefruit segments and endive.


Beets Baked with Lemon and Garlic (serves 4)

Ingredients
4 medium beets
1/2 lemon (zest and juice)
1 clove garlic chopped
extra virgin olive oil
salt and pepper
pinch of sugar (white or your preferred sugar)

Directions
Preheat the oven to 375 degrees. Peel and slice beets into 1/4 inch rounds and place in a baking dish.

Add lemon zest and juice, garlic, olive oil, salt, pepper and a pinch of sugar. Mix well, cover and bake for 40 minutes, stirring occasionally.
