Roasted Tomatoes with Prawns and Feta Cheese

This recipe for roasted tomatoes with prawns and feta is one of my favorite comfort meals. This dish is decedent and delicious, simple yet elegant. It's a great recipe to pull out for dinner guests or as a comforting meal for two.

Over the years, I've made this dish countless times and I always stick to the recipe because it's perfect. Just the way it is. Use the best quality prawns you can find or afford. Like anything, quality makes a huge difference.


Roasted Tomatoes, Prawns and Feta (serves 4)
Preheat oven to 450 degrees

Ingredients
6 Roma tomatoes, quartered
3 tablespoons olive oil
2 cloves of garlic, minced
1 pound medium prawns, cleaned and peeled
1 cup feta cheese
2 tablespoons lemon juice
handful of chopped parsley or basil
salt and pepper

Directions
Place the tomatoes, crumbled feta cheese and minced garlic in a baking dish. Drizzle olive oil, and salt and pepper and toss. Place in the oven and roast for about 15-20 minutes or until the tomatoes are soft.

Remove from oven and stir in parsley or basil, prawns and lemon juice. Place back in the oven for another 5 to 10 minutes, or until the prawns are cooked. Serve hot with some thick whole wheat dinner rolls or your favorite bread.
