satisfyingly easy

Back in my university days, I was all about the tuna melts. I'm pretty sure they were on a weekly rotation. Now that I'm a career girl with a refined palate, I'm all about the shrimp melts. mmmm.

Shrimp melts are a great fall back thing to make when your looking for something easy to make, tasty, and something that will fill the belly in a warm and satisfying way. Serve with fresh corn on the cob or green beans and a salad- and you're got yourself a delicious lunch or light dinner.


Tip!
To kick your shrimp melt up a notch, try adding a teaspoon of pureed chipotle peppers, salsa or a diced tomato.


Toasted Shrimp Melts (serves 2)

Ingredients
200 grams of hand-peeled shrimp
3 green onions, diced
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 tablespoon mayonnaise
2 Kaiser buns
1/2 cup Monterey Jack, grated
Pepper to taste

Directions
In a bowl, mix together the shrimp, green onions, lemon zest, mustard and pepper.

Slice the Kaiser buns in two and spread a thin layer of mayonnaise onto each half. Top with a spoonful of the shrimp mixture and a handful of Monterey Jack cheese. Repeat with each Kaiser half and place on a baking tray.

Place in the oven, under the boiler for about four minutes, or until the cheese is melted and the buns are toasted.


You could also serve these with mustard and coriander roasted potatoes.

These were sooo yummy! I used english muffins and did a mix of cheddar and monteray with jalepeno cheeses - nice kick. It was also super easy!
