My sister's husband is having his 32nd birthday party this Saturday night, and the food and drinks is Mexican themed. There's going to be a hot tub (yeah!), so the theme may seep into the attire for the evening too.
This is pretty exciting for me, for a number of reasons, one of them being that I finally have an excuse to do some research & find some great Mexican recipes.
Number of guests: 11 rounding up to 15 guests
Menu:
Plunged Shrimp with Chili Mojo (Finger Food, Elsa Petersen-Schepelern)
Tostadas de Ceviche de Camaron y Jaiba/Shrimp & Crab Cevuche on Fried Tortillas (Saveur, October 2006)
Shredded Chicken & Tomatillo Tacos (Food Network)
Mexican Layer Dip (FoodGeeks.com)
Guacamole (Cookingnook.com)
Roasted Almonds with Coriander, Chili and Olive Oil (Almonds are In)
**Make your own nut mixes are always a pleaser in any crowd, oh, hey, and they make great gifts too. Almonds Are In! has a deliciously long list of almond snack recipes
